Traditional Ollucos Chupe

Ingredients

½ kilogram of Julienned ollucos

4 Chopped potatoes

3 tablespoons of Oil

1 Chopped onion

1 Minced garlic cloves

1 tablespoon of Ground ají panca

6 cups of Water

1 Meat stock cube

1 cup of Peeled fava beans

2 Eggs

¾ cup of Milk

125 grams of Chopped fresh cheese

1 tablespoon of Chopped cilantro

1 tablespoon of Chopped parsley

1 pinch of Oregano

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pot, heat the oil and fry the onion with the garlic, oregano, and ají until cooked.

Step 2 : Then, add water, salt, and the stock cube, bringing the mixture to a boil.

Step 3 : Subsequently, add the ollucos, potatoes, and fava beans.

Step 4 : Cover the pot and let it cook on low heat until all ingredients are ready.

Step 5 : Next, add the cheese and previously beaten eggs, mixing well.

Step 6 : Turn off the heat and add the milk, cilantro, and parsley.

Step 7 : Finally, season to taste and carefully mix everything before serving.
