Ingredients

6 Fish fillets

1 kilogram of Fish heads and backbone

¼ cup of Oil

3 Minced garlic cloves

1 Chopped onion

2 Chopped tomatoes

1 Chopped celery stalk

2 Chopped scallion stalks

9 cups of Water

1 Chopped leek

2 Cilantro stems

2 Parsley stems

2 Mint stems

½ Cassava pieces

2 Cooked potatoes

1 Sliced corn on the cob

1 Aji Mirasol (Peruvian chili) include

Lemon

Chopped parsley

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare the recipe, start by washing the fish heads and backbone.

Step 2 : Then, in a pot with hot oil, sauté the garlic, onion, tomato, celery, leek, cilantro, and mint.

Step 3 : Add the fish heads and backbone, cover with water, and let it boil over medium heat for 1½ hours.

Step 4 : Once done, strain the resulting broth and cook the cassava, potatoes, corn, scallions, and whole Aji Mirasol in it.

Step 5 : Separately, fry the fish fillets in another skillet.

Step 6 : To serve, place some fish, cassava, potatoes, and corn on each plate, then add the hot broth.

Step 7 : Sprinkle with chopped parsley and a few drops of lemon before serving.
