The shrimp chupe is one of the most representative dishes of Peruvian cuisine, especially from Arequipa. It is a thick soup made with shrimp, potatoes, corn, fresh cheese, milk, and eggs.
In this recipe, we show you how to prepare it step by step with simple ingredients, following the traditional version.
It is usually served very hot and is one of those meals that are especially enjoyed when the temperature drops. Although, to be honest, at home we never needed an excuse to eat it any time of the year.
Shrimp Chupe
Ingredients

1 kilogram of Cleaned shrimp
½ cup of Oil
1 cup of Chopped onion
4 Chopped garlic cloves
1 Chopped tomato without skin or seeds
2 liters of Fish broth
½ cup of Rice
½ kilogram of Peeled white potato cut in half
1 Corn on the cob in slices
1 cup of Green beans
1 cup of Cabbage in pieces
1 cup of Squash in 2 cm cubes
½ cup of Chopped huacatay
5 Eggs
1 cup of Evaporated milk
½ kilogram of Crumbled fresh cheese
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a pot with hot oil, sauté the onion, garlic, and tomato over high heat, adding salt and pepper to taste.
Step 2 : Once ready, add the broth and let it boil.
Step 3 : Next, add the rice and cook for five minutes.
Step 4 : Add the potato and corn, cooking for another five minutes.
Step 5 : Then, add the beans, cabbage, squash, and huacatay, adjusting seasoning if necessary.
Step 6 : Beat one egg and slowly add it to the mixture, followed by the remaining four eggs.
Step 7 : Let it boil for two minutes, then add the whole shrimp, cooking briefly.
Step 8 : After that, pour in the milk, add the cheese, and recheck the seasoning.
Step 9 : Finally, serve the dish hot.
