Ingredients

Oil

300 grams of Beef

1 liter of Beef broth

1 cup of Cassava

1 cup of White potato

1 cup of Turnip

1 Corn on the cob slices

1 cup of Peas

½ Carrot

1 cup of Pallares (lima beans)

100 grams of Green beans

100 grams of String beans

1 cup of Fava beans

100 grams of Canuto noodles

1 Fresh basil bundle

100 grams of Fresh cheese

1 Garlic clove

100 grams of Spinach

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pot over the heat, pour in oil and sear the beef on both sides until golden.

Step 2 : Once seared, add the beef broth and let cook for about 25 to 30 minutes, allowing the meat to become tender and the flavors to meld.

Step 3 : Next, add the vegetables: cassava, white potatoes, turnip, corn on the cob, peas, carrots, pallares, green beans, string beans, and fava beans.

Step 4 : Cook these ingredients together for about 10 minutes, until they are tender but not falling apart.

Step 5 : Then, add the canuto-type noodles and cook for another 10 minutes, ensuring they are cooked and well incorporated into the broth.

Step 6 : Meanwhile, prepare the green sauce by blending the basil, fresh cheese, spinach, and garlic until smooth.

Step 7 : Season with salt and pepper to taste and blend again to combine all the ingredients thoroughly.

Step 8 : Once the sauce is ready, pour it into the pot and cook for another 10 minutes, allowing the flavors to blend and the sauce to integrate with the broth and vegetables.

Step 9 : When serving, you may decorate the dishes with fresh parsley if desired, to add a touch of color and freshness.
