Patasca from Tacna
Ingredients
1 kilogram of Shelled corn
½ kilogram of Beef
250 grams of Tripes
4 White potatoes in cubes
1 Chopped tomato
1 Chopped onion
2 tablespoons of Yellow chili
Mint
Oregano
Rosemary
Oil
Parsley
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a pot with water, place the hominy corn, beef, tripes, salt, and mint.
Step 2 : Bring to a boil and cook until the corn starts to burst, then set aside.
Step 3 : Prepare a dressing with the onion, tomato, chili, oregano, chopped parsley, salt, pepper, and rosemary.
Step 4 : Cook until the onion is tender, then add the beef and tripes cut into small cubes.
Step 5 : Add the hominy and beef broth and boil for 20 minutes.
Step 6 : Add the potatoes.
Step 7 : To serve, garnish with chopped parsley and yellow chili and serve hot.
Step 8 : You can also add chopped scallions as an additional decoration.
