Ingredients

1 kilogram of Mote

500 grams of Beef hoof

250 grams of Tripe

4 White potatoes

1 Tomato

1 Onion

2 tablespoons of Ground chili

Fresh mint

Oregano

Oil

Parsley

1 pinch of Salt

1 pinch of Black pepper

Preparation

Step 1 : The preparation of this dish begins by boiling the mote, beef hoof, and tripe in a pot with fresh mint and a pinch of salt until the mote bursts.

Step 2 : Next, prepare a sauté in another pot with salt, pepper, chili, oregano, onion, tomato, and chopped parsley.

Step 3 : Once the sauté is golden, add the cut beef hoof and tripe into small squares along with the reserved broth.

Step 4 : Then, add the mote and the remaining water from the initial cooking, and let it boil for 20 minutes.

Step 5 : Subsequently, add the pre-cooked and chopped potatoes in small pieces.

Step 6 : The dish is ready to serve.

Step 7 : It is recommended to serve this dish hot and it can be garnished with a bit of fresh parsley before bringing it to the table.
