Chupe Serrano
Ingredients
½ kilogram of Pumpkin in pieces
4 tablespoons of Oil
1 Chopped onion
2 Crushed garlic cloves
2 tablespoons of Aji panca paste
2 Chopped tomatoes
1 Chicken broth cube
7 cups of Water
1 ½ cup of Ullucu julienne
1 cup of Chopped carrot
2 Mint sprigs
1 teaspoon of Oregano
½ cup of Rice
½ cup of Shelled peas
½ kilogram of Chopped potatoes
1 ½ cup of Shelled broad beans
2 Sliced corn
¾ cup of Evaporated milk
3 Beaten eggs
150 grams of Diced fresh cheese
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a large pot, prepare a sauté with oil, chopped onion, garlic, aji panca, chopped tomato, salt, and pepper to taste.
Step 2 : Then add water, a crumbled chicken broth cube, pumpkin cut into pieces, ulluco sliced, chopped carrot, mint leaves, and a bit of oregano.
Step 3 : Let it boil over low heat and covered for 20 minutes.
Step 4 : Afterward, add rice, peas, chopped potatoes, and broad beans.
Step 5 : Continue cooking for another 10 minutes, also covered and over low heat.
Step 6 : Then, incorporate the sliced corn and let boil for another 10 minutes.
Step 7 : Finally, add the milk, stream the beaten eggs, and the diced fresh cheese.
Step 8 : Gently stir and serve hot.
