Chupe Picado
Ingredients
1 ½ liter of Water
1 cup of Chopped meat
1 Beef broth cube
⅓ cup of Chopped onion
⅓ cup of Chopped tomato
½ cup of Split broad beans
¾ cup of Shucked corn
1 tablespoon of Ground panca chili
3 cups of Diced potatoes
2 Chopped scallion heads
1 pinch of Cumin
1 pinch of Oregano
1 pinch of Salt
1 pinch of Pepper
1 pinch of Parsley
Preparation
Step 1 : In a large pot, place the water, meat, broth cube, onion, tomato, broad beans, corn, chili, potatoes, cumin, oregano, salt, and pepper.
Step 2 : Bring the mixture to a boil and remove any foam that forms on the surface.
Step 3 : Cook covered over low heat for 15 minutes or until the ingredients are cooked.
Step 4 : Then, adjust the seasoning and serve sprinkled with parsley and scallions.
