Chupe de ollucos
Ingredients
500 grams of Fresh ollucos, with shells and cut into thin strips
300 grams of Squash
500 grams of Yellow potatoes, halved
½ cup of Evaporated milk
150 grams of Fresh cheese cut into cubes
1 tablespoon of Fresh huacatay leaves
1 Onion, finely chopped
3 tablespoons of Oil
2 liters of Water
Salt, pepper, and cumin
Preparation
Step 1 : In a pot, heat 3 tablespoons of oil and sauté the onion and crushed garlic.
Step 2 : Season with salt, pepper, and cumin.
Step 3 : In another pot, cook the ollucos for about 15 minutes until tender.
Step 4 : Then add the squash along with the potatoes and let it cook until the soup begins to thicken.
Step 5 : Adjust the flavor as needed.
Step 6 : Next, incorporate the evaporated milk, cheese, and chopped huacatay leaves.
Step 7 : Serve the soup very hot and garnish with chopped parsley and cilantro.
