Ingredients

4 Bundles of yuyo leaves

2 Onions

2 tablespoons of Ground garlic

1 tablespoon of Aji rojo

3 Potatoes

500 grams of Chicken gizzards

1 cup of Cooked maize mote

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare the yuyo hot pepper, start by cooking the yuyo leaves until they are tender.

Step 2 : Then, make a purée with the potatoes and set aside.

Step 3 : Next, prepare a sauté with onion and ground garlic in a skillet.

Step 4 : Add the cooked yuyo leaves, the potato purée, and some water.

Step 5 : Season with salt and pepper, and cook over medium heat for a few minutes.

Step 6 : For the gizzards, season with salt, ground garlic, Aji rojo, salt, and pepper.

Step 7 : Then, fry them in plenty of hot oil until crispy.

Step 8 : Set aside.

Step 9 : Finally, serve the yuyo hot pepper accompanied by maize mote and fried gizzards.
