Yellow Chiles Stuffed with Tuna

Ingredients

8 Yellow peppers

6 Slices of sandwich bread

1 ¼ cup of Cold water

3 tablespoons of Vegetable oil

1 Chopped onion

½ cup of Chopped tomato

1 can of Canned tuna

1 ½ cup of Flour

2 Eggs

1 teaspoon of Baking soda

1 ½ tablespoon of Chopped parsley

½ cup of Blonde beer

2 cups of Vegetable oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To begin, make a longitudinal cut in the peppers leaving the stem intact to maintain their shape.

Step 2 : Then, carefully open the peppers and remove the veins and seeds.

Step 3 : Next, place the peppers in a pot of hot water and bring to a boil over medium heat for 2 minutes.

Step 4 : Then, remove from heat, strain, and repeat the process twice more to reduce spiciness.

Step 5 : Once ready, set aside.

Step 6 : In another bowl, soak the torn bread in 1¼ cups of cold water and set aside.

Step 7 : Then, heat the 3 tablespoons of oil in a skillet and add the onion, cooking until soft.

Step 8 : Add 1/2 cup of tomato and season with salt and pepper to taste.

Step 9 : Then, incorporate the soaked and drained bread along with the flaked tuna, mixing well until forming a homogeneous dough.

Step 10 : With this mixture, stuff the peppers and pass them through 1/2 cup of flour before setting aside.

Step 11 : In a separate bowl, mix the egg yolks with the remaining flour, baking soda, and chopped parsley.

Step 12 : Gradually add the beer while mixing until obtaining a thick batter.

Step 13 : Meanwhile, beat the egg whites to stiff peaks and fold them into the yolk mixture gently.

Step 14 : Dip the stuffed peppers into this batter, making sure they are well coated.

Step 15 : Finally, heat the remaining oil and fry the stuffed peppers until golden on all sides.

Step 16 : Once cooked, remove and place on absorbent paper to remove excess fat.
