To prepare this delicious dish, you will need: white potatoes, oil, onion, garlic, fresh ground yellow chili, paprika or red pepper, beef broth or water with a meat cube, crumbled fresh cheese, parsley, evaporated milk, salt, and pepper.
Traditional Potato Ajiaco
Ingredients
1 kilogram of Chopped white potatoes
¾ cup of Beef broth
¾ cup of Crumbled fresh cheese
½ cup of Oil
1 Chopped onion
1 Chopped garlic
Ground yellow chili
1 teaspoon of Paprika or red pepper
3 tablespoons of Chopped parsley
½ cup of Evaporated milk
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a large pot, heat the oil over medium-high heat and sauté the onion until golden.
Step 2 : Then, add the chopped garlic, chili, paprika or red pepper, salt, and pepper, cooking the mixture for a few minutes until the flavors meld.
Step 3 : Next, add the previously chopped potatoes along with the broth.
Step 4 : Allow the mixture to boil over medium-low heat.
Step 5 : Once the potatoes are cooked and tender, add the grated cheese, chopped fresh parsley, and evaporated milk, gently stirring to blend the flavors and create a creamy texture.
Step 6 : Finally, serve the potato ajiaco in deep plates, accompanied by freshly made white rice.
