Traditional Octopus Stir-fry
Ingredients
2 kilograms of Octopus
6 Sliced tomatoes
2 tablespoons of Butter
2 Julienned onions
8 French fries
2 tablespoons of Chopped cilantro
8 Scallion stalks
2 Tomato wedges
Worcestershire sauce
1 tablespoon of Sillao (soy sauce)
¼ cup of White wine
¼ cup of Oil
½ Julienned rocoto pepper
2 tablespoons of Chopped garlic
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The octopus should be washed and rubbed with coarse salt before preparation.
Step 2 : Then, place the tomato slices in a pot and put the octopus on top.
Step 3 : Cook covered for 25 minutes, checking for tenderness.
Step 4 : Next, remove the octopus, rub to remove the dark skin, and rinse.
Step 5 : Cut off the octopus head and set aside.
Step 6 : Slice the octopus diagonally.
Step 7 : In a skillet, heat the oil and add the onions, sauté until transparent.
Step 8 : Then, add the garlic, salt, pepper, octopus, butter, cilantro, scallions, rocoto, and tomato.
Step 9 : Add the Worcestershire sauce, soy sauce, and wine.
Step 10 : Finally, serve the octopus topped with French fries and it is recommended to accompany it with white rice.
