Traditional Fish Escabeche
Ingredients
6 Fish fillets
½ cup of Vinegar
2 Onions cut into rings
2 Yellow peppers
1 Mint sprig
Flour
1 ½ cup of Oil
4 tablespoons of Sunnyside pepper paste
2 Crushed garlic cloves
2 Corn on the cob slices
2 Sweet potato slices
3 Boiled eggs
Lettuce leaves
1 pinch of Salt
1 pinch of Pepper
1 pinch of Cumin
Preparation
Step 1 : To prepare this delicious dish, start by placing the vinegar in a bowl and then add the onion, fresh yellow pepper strips, and mint.
Step 2 : Season the mixture with salt, pepper, and cumin, and let marinate for an hour.
Step 3 : Then, wash and dry the fish fillets and season them with salt and pepper before coating them in flour and frying in hot oil.
Step 4 : Set them aside once they are ready.
Step 5 : In the same pan, sauté the garlic and sunnyside pepper paste in hot oil.
Step 6 : Add the mixture of vinegar, onion, and fresh pepper that you reserved, and allow it to boil.
