Traditional Arequipeño Adobo
Ingredients
1 kilogram of Pork loin
½ cup of Ají panca ground
1 tablespoon of Ground garlic
¼ teaspoon of Cumin
1 kilogram of Onion
2 liters of Chicha de jora
10 Chapa peppercorns
¼ teaspoon of Oregano
1 pinch of Salt
Preparation
Step 1 : The pork loin should be rubbed with ají, salt, ground garlic, and cumin, then placed in a pot.
Step 2 : Next, blend two onions and pour over the pork.
Step 3 : Then, add the remaining onions cut into four pieces and include the unsweetened chicha de jora.
Step 4 : The mixture should marinate overnight.
Step 5 : Afterward, add the peppercorns, oregano, and cook for an hour and a half on medium heat.
Step 6 : Once ready, the Arequipeño adobo can be served and enjoyed accompanied by bread.
