Ingredients

1 kilogram of Alpaca meat

1 kilogram of Chopped red onion

1 kilogram of Cooked yucas

2 cups of Chicha de jora

3 tablespoons of Oil

2 tablespoons of Aji panca powder

½ tablespoon of Oregano

½ teaspoon of Ground cumin

½ teaspoon of Ground pepper

1 teaspoon of Achiote

½ teaspoon of Rosemary

Preparation

Step 1 : To prepare this delicious dish, start by cutting the alpaca meat into not too small pieces.

Step 2 : Then, fry the onion in four tablespoons of hot oil until golden.

Step 3 : In a container, pour the beer and add the ají panca, garlic, cumin, pepper, oregano, achiote, rosemary, and previously sautéed onion.

Step 4 : Let the meat marinate in this mixture overnight to intensify its flavor.

Step 5 : The next day, drain the alpaca pieces and sear them in a hot skillet.

Step 6 : Then, return the meat to the marinade mixture and cook over low heat for about an hour.

Step 7 : Finally, serve this exquisite alpaca meat dish accompanied by cooked or fried yucas.
