It is served accompanied by criolla sauce and optionally, can be enjoyed with breaded steak, fried egg, or fried plantain, or dipped in a delicious shrimp sauce.
Tacu Tacu de Pallares
Ingredients
½ kilogram of Cooked rice
1 kilogram of Soaked pallares
Pork skin
1 Onion
Oil
1 cup of Chopped onion
2 tablespoons of Ground garlic
6 Ground yellow chili peppers
1 tablespoon of Clove powder
1 pinch of Salt
1 pinch of Pepper
1 pinch of Cumin
Preparation
Step 1 : The pallares should be soaked the day before and peeled before cooking.
Step 2 : Then, they are cooked with onion and pork skin in a little water until well cooked.
Step 3 : Once ready, they should be strained and mashed until obtaining a thick mixture.
Step 4 : Prepare an marinade with onion, garlic, chili peppers, and clove, and mix with the pallares and rice.
Step 5 : Next, form the mixture into oval shapes and fry until lightly golden all over.
Step 6 : To serve, accompany with criolla sauce and enjoy.
