Ingredients

2 cups of Cooked beans

1 ½ cup of Cooked white rice

½ cup of Chopped red onion into cubes

2 Medium ripe tomato

1 teaspoon of Finely chopped parsley

1 teaspoon of Dried oregano

1 teaspoon of Ground garlic

1 tablespoon of Ground yellow chili pepper

Vegetable oil

Olive oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : First, the tomatoes should be soaked in hot water for a few minutes.

Step 2 : Then, peel them, remove the seeds, and cut into small cubes.

Step 3 : In a bowl, mash the beans with a fork until almost pureed.

Step 4 : Next, heat three tablespoons of vegetable oil in a skillet.

Step 5 : Add the onion and garlic, letting them brown until the onion is transparent.

Step 6 : Add the tomato, ground yellow chili, and oregano, cooking everything for a few more minutes while stirring constantly with a wooden spoon.

Step 7 : Then, first add the beans, and gradually add the rice to the mixture, mixing well until forming a homogeneous mass.

Step 8 : Season with salt and pepper to taste, add the parsley, and let sit for at least 1 hour before serving, preferably covered with a lid.

Step 9 : To finish, heat a little vegetable oil in a small skillet.

Step 10 : Once hot, add a portion of the mixture and fry on both sides, shaping it into the desired tortilla form.

Step 11 : Repeat this process, flipping the tortilla several times to ensure even browning and prevent burning.

Step 12 : Once ready, place on a plate, drizzle with a little olive oil, and serve with your preferred garnish.
