Spicy Conch Cuisine
Ingredients
48 Large conchs
50 milliliters of Lime juice
2 Red rocotos
Vegetable oil
¼ cup of Butter
½ cup of Wine
30 grams of Peeled garlic
½ cup of Cream
¼ cup of Grated parmesan cheese
Cooked potatoes
Chopped parsley
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Carefully wash the conchs and season them with salt, pepper, and lime juice.
Step 2 : Then, boil the rocotos in water with salt and vinegar, remove the veins and seeds, and blend them.
Step 3 : In a skillet, cook the garlic in oil until golden, then add the blended rocotos.
Step 4 : In another skillet, sautée chopped garlic in butter, add the rocotos and wine, and cook until everything is well combined.
Step 5 : Add the cream and Parmesan cheese to the garlic and rocoto mixture.
Step 6 : In another skillet, melt butter and sauté the conchs, then add them to the sauce; adjust seasoning to taste.
Step 7 : To serve, sprinkle chopped parsley on top and accompany the conchs with cooked potatoes.
