Seafood Cau Cau
Ingredients
1 kilogram of Shrimp
1 Head and spine of fish
½ Onion
1 Celery stalk
1 Parsley stalk
36 Squid
48 Clams
48 Mussels
70 Snails
2 White fish fillets
Flour
Vegetable oil
36 Choros
2 tablespoons of Ground achiote pepper
2 teaspoons of Chopped garlic
4 Chopped onions
6 White potatoes, diced
Chopped peppermint
1 pinch of Salt
1 pinch of Pepper
1 pinch of Cumin
Preparation
Step 1 : To prepare this delicious recipe, start by placing the shrimp heads and the fish head and spine in boiling water with celery, onion, and parsley.
Step 2 : Once cooked, strain the broth and set aside.
Step 3 : Then, chop and cook the seafood in the previously prepared broth.
Step 4 : While the seafood is cooking, brown the lightly floured fish in a skillet.
Step 5 : Similarly, fry the shrimp tails until golden.
Step 6 : In a separate pot, prepare a sofrito with onion, garlic, achiote, and spices to taste.
Step 7 : Once the sofrito is ready, add the seafood, potatoes, shrimp, and browned fish.
Step 8 : Let everything cook together until the ingredients are well combined.
Step 9 : To serve, sprinkle the dish with finely chopped peppermint and accompany with white rice.
