Sancochado
Ingredients
2 kilograms of Beef
½ kilogram of Soaked chickpeas
4 Cut carrots
1 kilogram of Green beans
2 Split onions
4 Celery stalks
1 Chopped turnip
8 Cut white potatoes
1 Chopped cabbage
1 kilogram of Yuca in pieces
4 Chopped corn on the cob
1 teaspoon of Sugar
1 pinch of Salt
Preparation
Step 1 : Place plenty of water in a large pot and bring to a boil.
Step 2 : Add the chopped meat and remove the foam from the surface.
Step 3 : Let it boil for an hour, then season with carrots, green beans, turnip, celery, and onions.
Step 4 : Let it boil for 5 minutes, then add the cabbage, potatoes, and yuca.
Step 5 : Once the meat is cooked, remove it along with the vegetables.
Step 6 : Strain the broth and season to taste.
Step 7 : Cook the corn on the cob in water with sugar and add it to the previously cooked vegetables.
Step 8 : Cook the sweet potatoes separately and place them with the vegetables.
Step 9 : Cook the chickpeas in water and serve separately in a dish.
Step 10 : Serve the hot broth with the vegetables and meat separated, accompanied by Chili Cream, Creole Sauce, and Parsley Sauce.
