Rocoto Relleno de Fiestas Patrias
Ingredients
12 Rocotos
3 tablespoons of Oil
2 cups of Chopped onion
½ kilogram of Ground beef
2 Peeled chopped sausages
¼ cup of Vinegar
1 Meat cube
½ cup of Raisins
¼ cup of Chopped parsley
4 Boiled eggs
50 grams of Chopped olives
10 Cooked yellow potatoes
Fresh cheese in slices
2 cups of Evaporated milk
½ cup of Water
3 Eggs
¾ cup of Cream
3 Crushed garlic cloves
Aji panca paste
1 pinch of Salt
1 pinch of Pepper
1 pinch of Cumin
Preparation
Step 1 : To prepare this delicious dish, start by cutting off the tops of the rocotos, as if removing a lid.
Step 2 : Clean the rocotos properly, removing seeds and veins.
Step 3 : Then, wash them and soak in water with salt for 12 to 24 hours, making sure to change the water several times.
Step 4 : Once the rocotos have soaked long enough, drain them and place in a pot with hot salted water.
Step 5 : Bring them to a boil for a few minutes and then drain upside down on a rack.
Step 6 : In a skillet, heat the oil and sauté the onion until tender.
Step 7 : Add the garlic, salt, pepper, aji panca, to taste, and cumin.
Step 8 : Next, add the ground beef, sausages, meat cube, and vinegar.
Step 9 : Incorporate the chopped boiled eggs, olives, and parsley.
Step 10 : Mix well and adjust the seasoning.
Step 11 : Stuff the rocotos with this meat mixture and place a slice of Paria or mantecoso cheese on top.
Step 12 : Then, replace the tops of the rocotos that you removed at the beginning.
Step 13 : On a pre-greased baking tray, place the stuffed rocotos alternating with cooked potatoes.
Step 14 : Place a slice of cheese on each potato.
Step 15 : In a bowl, mix the milk with the eggs and water.
Step 16 : Season with salt and pepper, and carefully pour this mixture over the rocotos and potatoes.
Step 17 : Place the tray in a preheated oven at 350°F (175°C) and cook until the mixture begins to set.
Step 18 : Open the oven and add half a cup of cream on top.
Step 19 : Return to the oven for about 10 more minutes.
Step 20 : Once done, remove from the oven and serve this exquisite dish.
