Ingredients

1 kilogram of Diced macre pumpkin

1 Finely chopped onion

4 Minced garlic cloves

2 tablespoons of Yellow chili pepper

2 Potatoes, cubed

1 cup of Peruvian corn kernels

½ cup of Peas

3 cups of Vegetable broth

1 can of Evaporated milk

150 grams of Fresh cheese

Oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare this delicious stew, start by placing a pot on the stove with some oil.

Step 2 : Sauté the onion and garlic for a few minutes, then add the yellow chili pepper and stir everything for 3 minutes.

Step 3 : Next, add the pumpkin, potatoes, corn, and peas to the pot.

Step 4 : Season with salt and pepper, and mix well with the sauté.

Step 5 : Add the broth and cook for 10 to 15 minutes over medium heat until the ingredients are soft.

Step 6 : Then, add the milk and cheese, mixing everything evenly.

Step 7 : When the pumpkin is broken down, remove from heat and serve the stew.

Step 8 : To enhance its flavor, it is recommended to add pieces of cheese and huacatay leaves on top.

Step 9 : This delicious dish can be accompanied with steak, white rice, and slices of fried plantain for a complete culinary experience.
