Ingredients

½ cup of Oil

1 Large onion, finely chopped

1 Garlic clove, finely chopped

Fresh yellow chili, ground

1 teaspoon of Paprika or red pepper

1 kilogram of Peeled white potatoes, cooked and chopped

¾ cup of Beef broth

¾ cup of Crumbled fresh cheese

3 tablespoons of Chopped parsley

½ cup of Evaporated milk

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : For the preparation of this delicious potato ajiaco, the potatoes should be cooked, peeled, and then mashed with the help of a fork.

Step 2 : Once ready, set aside.

Step 3 : In a pot, sauté the garlic, onion, and chili.

Step 4 : Then, season with salt and pepper, add the potatoes, water, and milk, and mix everything well.

Step 5 : Subsequently, add the cheese cubes and remove from heat.

Step 6 : To serve, accompany the potato ajiaco with white rice and decorate with slices of hard-boiled eggs and chopped parsley.
