Ingredients

4 Chicken thighs

1 Chopped onion

1 Bell pepper strips

100 grams of Sliced ham

4 Chopped tomatoes

½ cup of Dry white wine

1 Yellow chili slices

Oil

1 ½ tablespoon of Tomato paste

1 Eggplant strips

1 Chopped garlic clove

1 Bay leaf

1 pinch of Salt

1 pinch of Pepper

Chopped parsley

Preparation

Step 1 : To prepare this recipe, first season the chicken thighs with salt and pepper.

Step 2 : Then, to peel the peppers, place them in the oven or over the fire until the skin burns.

Step 3 : Afterward, wrap them in newspaper, rub to remove the skin, and cut into long strips.

Step 4 : In a skillet, heat oil and fry the chicken thighs until golden brown on all sides.

Step 5 : Remove and place them in a large pot.

Step 6 : In the same skillet, brown the ham and then add garlic and onion, cooking for 5 minutes.

Step 7 : Next, add the eggplant and cook for another 5 minutes.

Step 8 : Add the peppers, tomatoes, tomato paste, salt, and pepper to the skillet, and once ready, transfer everything to the pot with the chicken.

Step 9 : Cover and cook over low heat until the chicken is tender.

Step 10 : Finally, serve and garnish with chopped parsley.
