Peruvian Tacu Tacu
Ingredients
3 cups of Canary beans
300 grams of Pork fat
2 Chopped onions
2 Chopped garlic cloves
2 Chopped yellow chilies
2 cups of Cooked rice
Oil
Soda crackers
Creole sauce
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The beans should be soaked the day before and cooked with pork fat or bacon until they are tender.
Step 2 : Then, they are stirred with a wooden spoon, separated, and fried with onions, garlic, and chilies.
Step 3 : Next, cooked rice is added, seasoned, and cooked until golden.
Step 4 : Once ready, it is allowed to cool.
Step 5 : Portions of tacu tacu are formed and passed through crushed crackers or toasted bread.
Step 6 : Finally, they are fried in hot oil until golden and served with steak, fried plantains, eggs, and creole sauce.
