Ingredients

6 Chicken thighs

1 Red onion diced

1 teaspoon of Ground or chopped garlic

2 tablespoons of Yellow aji

4 tablespoons of Cilantro

½ teaspoon of Salt

½ teaspoon of Pepper

2 Carrots diced

½ cup of Peas

2 cups of Water

4 Peeled cut potatoes

3 tablespoons of Oil

Preparation

Step 1 : Season the chicken thighs with salt and pepper.

Step 2 : In a skillet, heat oil and sear the chicken thighs on both sides.

Step 3 : Remove and set aside on a plate.

Step 4 : In the same skillet, add the onion and garlic, sauté for 4 minutes and add the yellow aji, mixing well for 3 minutes.

Step 5 : Add the cilantro paste and cook for 5 minutes.

Step 6 : Then, add the chicken thighs back in, mix well, and pour in water until the chicken is covered.

Step 7 : Cover and cook for 10 minutes.

Step 8 : Add the carrots, peas, and chopped potatoes, adjust salt to taste, cover again, and cook for an additional 25 minutes.

Step 9 : Once ready, serve accompanied by white rice.
