Peruvian Pork Adobo
Ingredients
2 kilograms of Pork meat
7 Minced garlic cloves
¾ cup of Red wine vinegar
1 teaspoon of Ground cumin
½ cup of Oil
2 teaspoons of Achiote
1 cup of Ají panca paste
3 Julienned onions
3 tablespoons of Water
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The pork is cleaned and cut into pieces.
Step 2 : Then, it is placed in a bowl and seasoned with achiote, cumin, salt, pepper, and half of the garlic.
Step 3 : Add the vinegar, water, onions, and ají panca paste, and let it marinate for 24 hours.
Step 4 : Afterward, in a pot, fry the remaining garlic in oil and add the pork pieces, half of the marinating liquid, and the onions.
Step 5 : Cover the pot and cook over low heat until the meat is cooked and tender.
Step 6 : If necessary, add boiling water, up to a maximum of 1 cup, to keep the stew juicy.
Step 7 : Finally, serve the stew with white rice and cooked sweet potatoes, yuca, or potatoes.
