Peruvian Chaufa Rice

Ingredients

1 kilogram of Rice

4 Eggs

½ cup of Oil

2 cups of Scallions

1 tablespoon of Ground garlic

1 tablespoon of Grated ginger

½ cup of Diced red pepper

300 grams of Meat

4 tablespoons of Sesame oil

8 tablespoons of Sillao (soy sauce)

1 tablespoon of Oyster sauce

1 pinch of Salt

1 pinch of Sugar

1 pinch of Pepper

Preparation

Step 1 : In a skillet, heat 2 tablespoons of oil over medium heat.

Step 2 : Add half a cup of finely chopped scallions, one tablespoon of ground garlic, and one tablespoon of grated ginger.

Step 3 : Then, add half a cup of diced red pepper and one cup of meat of your choice, browning everything for 2 minutes.

Step 4 : Next, add 4 cups of rice, turn the heat to maximum, and stir for a few minutes before letting it rest.

Step 5 : Then, add 8 cups of water and cook until the rice is ready.

Step 6 : Incorporate 4 tablespoons of sesame oil, 8 tablespoons of sillao (soy sauce), salt, pepper, a pinch of sugar, 1 tablespoon of oyster sauce, and 2 cups of scallions, stirring well.

Step 7 : Add a tortilla prepared with 4 eggs, cut into strips, and stir to incorporate.

Step 8 : To finish, you can add a few drops of lemon and some homemade blended rocoto to taste.
