Ingredients

6 Skin-on chicken pieces

1 Small dice white onion

3 Finely chopped garlic cloves

1 cup of Toasted peanuts

½ tablespoon of Salt

½ tablespoon of Pepper

½ tablespoon of Cumin

2 tablespoons of Yellow chili paste

4 tablespoons of Red ají panca

2 Cloves

½ cup of Beer

1 teaspoon of Ground oregano

3 cups of Chicken broth

1 tablespoon of Chopped parsley

¼ cup of Oil

Preparation

Step 1 : Start by blending the toasted peanuts with a tablespoon of chicken broth until a paste is obtained, then set aside.

Step 2 : Next, season the chicken pieces with salt, pepper, cumin, and oregano to taste.

Step 3 : In a skillet, heat 3 tablespoons of oil and sear the seasoned chicken on both sides.

Step 4 : Once browned, remove the chicken to a plate.

Step 5 : In the same skillet, add one tablespoon of oil and sauté the chopped onion and garlic until golden.

Step 6 : Then, add the yellow chili paste and ají panca.

Step 7 : Mix and cook over low heat for 10 minutes.

Step 8 : After this time, gradually incorporate the remaining salt, cumin, pepper, oregano, the cloves, and 4 tablespoons of the peanut paste to taste.

Step 9 : Mix well and continue sautéing.

Step 10 : Add the beer, let the alcohol evaporate, and then add 2 full cups of chicken broth.

Step 11 : Blend thoroughly and place the seared chicken pieces back into the skillet.

Step 12 : Proceed to cover the chicken with the sauce, ensuring it penetrates both sides without covering it completely with the broth.

Step 13 : When it begins to boil, cover the skillet and cook over medium heat for 10 minutes, then turn the chicken pieces and cook an additional 10 minutes covered.

Step 14 : In total, depending on the size of the chicken pieces, cooking time will be between 25 to 30 minutes.

Step 15 : To serve, it is recommended to accompany with white rice and sprinkle with chopped parsley.
