Pallares Puree
Ingredients
1 kilogram of Pallares
½ cup of Butter
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Place the pallares in a large pot and cover with water.
Step 2 : Bring to a boil and cook for about 5 minutes or until the shell easily detaches.
Step 3 : Drain and peel.
Step 4 : Cover again with water and return to heat until cooked and tender.
Step 5 : Drain and blend with the necessary amount of cooking water, passing the mixture through a fine strainer.
Step 6 : Mix with butter until smooth and creamy.
Step 7 : Season with salt and pepper to taste.
Step 8 : Finally, serve the hot puree.
