Olluquito with Peruvian Charqui
Ingredients
1 kilogram of Ulluco
200 grams of Charqui (Jerky)
1 Chopped onion into small squares
1 Chopped tomato in the food processor
1 tablespoon of Ground panca chili
1 tablespoon of Ground yellow chili
1 tablespoon of Ground garlic
Salt, pepper, and cumin
4 tablespoons of Chopped parsley and cilantro
Preparation
Step 1 : To prepare the ulluquito with charqui, start by chopping the ulluco into small pieces.
Step 2 : Meanwhile, sauté the charqui in a pan with a little oil for a short time, then remove to shred it.
Step 3 : In a separate pot, fry the chopped onion, ground garlic, salt, and pepper in hot oil to make a sauce.
Step 4 : Once ready, add the charqui along with the chopped ulluco and cook for a short while.
Step 5 : Finally, add a little broth and ground yellow chili to the mixture.
Step 6 : Mix everything and let it rest for five minutes before serving.
Step 7 : This dish can be accompanied with white rice.
