Ollucos Ajiaco
Ingredients
1 ½ kilogram of Julienned ollucos
5 tablespoons of Oil
2 Chopped onions
2 Crushed garlic cloves
Ground aji
¾ cup of Hot water
1 Beef bouillon cube
¾ cup of Chopped fresh cheese
1 ½ tablespoon of Chopped parsley
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a medium pot, heat the oil and sauté the onions.
Step 2 : Next, add the garlic, ground Aji, salt, and pepper, cooking until the onions are well cooked.
Step 3 : Add the ollucos and mix with the previously cooked ingredients.
Step 4 : Dissolve the beef bouillon cube in hot water in a separate container and pour over the ollucos.
Step 5 : Bring the mixture to a boil and cook, stirring occasionally, until the ollucos are tender.
Step 6 : Then, add the chopped fresh cheese and parsley, adjust the seasoning to taste, and serve with white rice.
