Ingredients

2 kilograms of Octopus

6 Tomatoes sliced into thick rounds, for cooking the octopus

2 tablespoons of Butter

2 Medium onions, sliced julienne

2 tablespoons of Garlic, finely chopped

1 pinch of Salt

1 pinch of Pepper

8 Potatoes

2 tablespoons of Cilantro, chopped

8 Chinese onion stalks, chopped into medium pieces, at an angle

2 Tomatoes, peeled, seedless, and cut into thin wedges

English sauce

1 tablespoon of Soy sauce

¼ cup of White wine

¼ cup of Oil, for frying the potatoes

½ Rocoto, seeds and veins removed, cut into julienne

Preparation

Step 1 : To prepare this Peruvian-style octopus recipe, first wash the octopus and scrub it with coarse salt.

Step 2 : Then, arrange the tomato slices at the bottom of a pot and place the octopus on top.

Step 3 : Cook the octopus covered for about 25 minutes, but it’s essential to check its tenderness to prevent it from being undercooked or overcooked, which would make it tough.

Step 4 : Once the octopus is cooked, remove it from the pot and wipe it with a thick towel to remove some of the dark skin, then rinse with water.

Step 5 : Cut off the head of the octopus and set aside for another preparation, while the rest of the octopus is sliced at an angle.

Step 6 : In a hot skillet with oil, add the onions and sauté until transparent.

Step 7 : Then add the garlic, salt, pepper, the cooked and sliced octopus, continuing the sauté with butter.

Step 8 : Add cilantro, Chinese onion, rocoto, and tomato, sautéing everything together for a few minutes.

Step 9 : Finally, add the English sauce, soy sauce, and wine, stirring the mixture well.

Step 10 : Once ready, the Peruvian-style octopus is served on a dish with French fries on top.

Step 11 : It can be accompanied by white rice for an extra touch.
