Ocopa with Shrimp

Ingredients

200 grams of Mirasol chili

12 Walnuts

10 Vanilla cookies

Oil

1 kilogram of Shrimp

¾ cup of Olive oil

½ Lemon

1 ½ cup of Boiling water

8 Potatoes

8 Olives

Lettuce leaves

1 Garlic clove

½ Onion

6 Huacatay leaves

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Using gloves, open and seed the chilies. Wash them under water, rubbing to clean the interior.

Step 2 : Place the chilies, onion, garlic, and huacatay on a baking sheet and roast until golden.

Step 3 : Clean and peel the shrimp, set aside the tails.

Step 4 : Fry the heads, tails, and shells of the shrimp in olive oil, then blend with boiling water and strain.

Step 5 : Soak the chilies in boiling water for 4-5 hours, discard the water, and blend with the other ingredients to make a paste.

Step 6 : Fry the shrimp tails in olive oil with lemon, salt, and pepper until pink.

Step 7 : Serve the ocopa sauce with boiled potatoes, a cooked egg, lettuce, and olives. Garnish with the fried shrimp tails.
