Huancaina Noodles
Ingredients

1 Package of fettuccine pasta
1 cup of Evaporated milk
6 Yellow chili peppers
½ Saltine crackers
200 grams of Fresh cheese
1 pinch of Salt
1 liter of Water
50 grams of Butter
1 pinch of Pepper
Preparation
Step 1 : Cook the pasta following the package instructions.
Step 2 : Cut the chili peppers and clean them properly, passing them through salted hot water and then cold water.
Step 3 : In a skillet, add a little oil to sauté the onion and garlic.
Step 4 : Add the yellow chili peppers and sauté for a few more minutes.
Step 5 : Remove the skillet from the heat and let cool.
Step 6 : In a food processor, combine the sautéed mixture with the cheese, crackers, and milk, processing everything until a smooth cream is obtained.
Step 7 : Season the mixture with salt and pepper to taste.
Step 8 : Melt the butter in a skillet and pour the resulting sauce, cooking for a few minutes.
Step 9 : Add the fettuccine to the sauce and mix well.
Step 10 : Finally, serve the fettuccine and sprinkle with Parmesan cheese before serving.
