Ingredients

Homemade Chicken Stew

4 Chicken thighs

½ kilogram of Peeled potatoes cut into large cubes

3 Peeled, seedless tomatoes, diced

1 Red onion, finely chopped

½ Bell pepper, diced

1 cup of Peeled peas

2 Peeled and diced or sliced carrots

1 tablespoon of Ground garlic

1 tablespoon of Ají panca powder

1 tablespoon of Yellow chili pepper

2 tablespoons of Salt

1 teaspoon of Monosodium glutamate (ajino-moto)

1 teaspoon of Pepper

1 teaspoon of Cumin

1 teaspoon of Ground oregano

1 A splash of oil

½ cup of Chicken broth

Preparation

Step 1 : Season the chicken with salt, pepper, cumin, and monosodium glutamate.

Step 2 : Heat a pot with a splash of oil and sear the chicken.

Step 3 : Add the chopped onion and tomato, then cover the pot until it begins to sweat.

Step 4 : Then, add the ají panca, yellow chili, garlic, salt, pepper, cumin, remaining monosodium glutamate, ground oregano, and water or broth.

Step 5 : Add the peas and carrots, cover, and simmer over low heat.

Step 6 : Once the peas are cooked, add the potatoes and cook covered for an additional 10 minutes over low heat.

Step 7 : Finally, serve and optionally garnish with parsley.
