Ingredients

1 kilogram of Medallions of alpaca

2 Roasted peppers, without skin and seeds

2 Potatoes cut into cubes

½ cup of Corn kernels

½ cup of String beans cut into pieces

½ cup of Peas

½ cup of Green pallares

1 tablespoon of Yellow chili paste

4 tablespoons of Vinegar

½ cup of Olive oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Season the medallions with salt and pepper, drizzle with a little olive oil, and place on the grill until browned on both sides.

Step 2 : Meanwhile, prepare the vinaigrette sauce in a blender by mixing the peppers, ¼ cup of olive oil, 4 tablespoons of vinegar, salt, and pepper.

Step 3 : Boil the potatoes, pallares, peas, and string beans and set aside.

Step 4 : In a bowl, combine the potatoes, pallares, peas, string beans, and corn kernels. Add the chili, olive oil, salt, and pepper, and set aside.

Step 5 : Finally, place the alpaca loin medallions bathed in the vinaigrette and serve with the vegetable salad.
