Ingredients

2 kilograms of Boneless pork rib roast

4 Crushed garlic cloves

Olive oil

1 teaspoon of Mustard

1 tablespoon of Soy sauce (sillao)

2 teaspoons of Honey

3 cups of Canary beans

300 grams of Pork fat in pieces

2 Chopped onions

2 Chopped garlic cloves

2 Chopped yellow peppers

2 cups of Cooked rice

Oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The pork should be cleaned and then flattened, seasoned with garlic, salt, and pepper; then set aside.

Step 2 : Next, soak and cook the canary beans, then mix them with onion, garlic, peppers, rice, and season to taste.

Step 3 : This mixture is spread over the pork.

Step 4 : Then, roll up the pork with the filling and tie it with thick string; afterward, brush it with a mixture of garlic, mustard, soy sauce, and honey.

Step 5 : Continue by baking the roll at 180°C for 1.5 hours, basting it with the cooking juices.

Step 6 : Afterward, let it rest, slice into pieces, and serve with creole sauce.
