Creole Corn Pie
Ingredients
8 Corn cobs
¾ cup of Milk
¾ cup of Margarine
1 tablespoon of Sugar
2 tablespoons of Pisco
4 Eggs
½ kilogram of Ground beef
1½ tablespoon of Vegetable oil
1 Crushed garlic clove
1 teaspoon of Blended yellow chili
1 Chopped onion
15 Raisins
2 Boiled eggs
3 Chopped olives
1 teaspoon of Chopped cilantro
Sugar for sprinkling
1 pinch of Oregano
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To prepare this delicious Corn Pie, start by grating, grinding, or blending the corn kernels with the milk.
Step 2 : In a pot, heat the margarine over low heat and add the corn mixture, stirring constantly.
Step 3 : Add salt and pepper, and cook for about 10 minutes.
Step 4 : If the mixture is too thick, you can add more warm milk until achieving the right consistency, which should be thick but not dry.
Step 5 : Remove the pot from heat and let it cool slightly.
Step 6 : Next, add a touch of Pisco to the mixture and beat the yolks until obtaining a light yellow color.
Step 7 : Incorporate the yolks into the corn mixture and then, with folding motions, add the beaten egg whites.
Step 8 : Mix everything evenly and set aside.
Step 9 : For the filling, heat oil in a skillet and sauté the onion.
Step 10 : Add garlic, chili, and season with salt, pepper, and oregano.
Step 11 : Add the meat and cook until ready, then incorporate the raisins.
Step 12 : Grease a baking dish and pour half of the corn preparation.
Step 13 : Cover with the meat filling and place the boiled eggs, olives, and chopped cilantro on top.
Step 14 : Add the remaining corn mixture on top and sprinkle a little sugar over it.
Step 15 : Bake in a preheated oven at 120°C for 40 minutes.
Step 16 : Once ready, your Corn Pie is ready to be served and enjoyed by the whole family.
