Chickpea Tacu Tacu
Ingredients
2 cups of Soaked chickpeas
1 Chopped onion
2 Chopped garlic cloves
2 Chopped yellow peppers
3 cups of Cooked rice
Oil
Crushed toasted bread
2 Julienne-cut onions
2 Julienne-cut peppers
3 tablespoons of Ground ají panca
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To prepare the Chickpea Tacu Tacu, first drain the soaked chickpeas from the previous day and place them in a pot, cooking them in unsalted water until tender.
Step 2 : Then let the chickpeas cool and blend them with some of the cooking water.
Step 3 : In a large skillet with hot oil, fry the onion, garlic, and peppers, seasoning to taste.
Step 4 : Next, add the blended chickpeas and cooked rice, mixing well and adjusting seasoning as needed.
Step 5 : Cook the mixture until it slightly browns and then let it cool.
Step 6 : To form portions like stuffed potatoes, coat them in crushed toasted bread and fry in hot oil.
Step 7 : For the sauce, heat oil in a skillet and add onion, peppers, and ground ají panca, cooking and stirring constantly.
Step 8 : Finally, serve the sauce over the Chickpea Tacu Tacu.
