Ingredients

2 kilograms of Chicken

1 Celery stalk

½ Red onion, chopped

1 Carrot, chopped

3 Red peppers

4 Garlic cloves

6 Slices of sandwich bread

3 tablespoons of Vegetable oil

2 Julienned onions

3 tablespoons of Blended yellow aji

2 cups of Evaporated milk

2 cups of Chicken broth

150 grams of Grated Parmesan cheese

4 Hard-boiled eggs

2 tablespoons of Chopped parsley

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare this dish, start by cooking the chicken in 4 cups of water along with the celery, red onion, carrot, salt, and pepper.

Step 2 : It is recommended to boil over medium heat, keeping the pot covered for about 25 minutes until the chicken is cooked.

Step 3 : Then, remove the chicken, peel it, and cut the meat into large pieces, reserving the broth.

Step 4 : Next, rub the peppers with a bit of oil and roast in the oven until the skin loosens.

Step 5 : Once roasted, blend them with the garlic cloves.

Step 6 : Soak the bread in the reserved broth and blend it.

Step 7 : Set aside both mixtures.

Step 8 : In a skillet, fry the white onion in oil until transparent.

Step 9 : Then, add the blended pepper mixture and cook for a few minutes.

Step 10 : Next, incorporate the blended bread, yellow aji, evaporated milk, and remaining broth.

Step 11 : Bring the mixture to a boil until thickened.

Step 12 : Once thickened, add the cooked chicken, Parmesan cheese, eggs, salt, and pepper to taste.

Step 13 : Mix everything well and serve this delicious dish accompanied by potatoes, rice, and chopped parsley.
