Chicken Stew
Ingredients

4 Chicken pieces
½ kilogram of Peeled potatoes cut into large cubes
3 Peeled, seedless tomatoes, diced
1 Red onion, finely chopped
½ Bell pepper, diced
1 cup of Shelled peas
2 Peeled carrots, cut into cubes or slices
1 tablespoon of Ground garlic
1 tablespoon of Ground ají panca
1 tablespoon of Yellow ají
2 tablespoons of Salt
1 teaspoon of Ajinomoto (monosodium glutamate)
1 teaspoon of Pepper
1 teaspoon of Cumin
1 teaspoon of Dried oregano
1 A splash of oil
½ cup of Chicken broth
Preparation
Step 1 : Season the chicken with salt, pepper, cumin, and ajinomoto.
Step 2 : Then, heat a little oil in a pot and sear the chicken until golden.
Step 3 : Next, add the chopped onion and tomato, cover the pot to let the ingredients sweat and release their aromas.
Step 4 : Afterward, add the ají panca, yellow ají, garlic, salt, pepper, cumin, remaining ajinomoto, oregano, and water or broth, mixing well to blend all the flavors.
Step 5 : Add the peas and carrots, then cover again and cook on low heat.
Step 6 : When the peas are tender, add the potatoes and continue cooking, with the pot covered, for about 10 more minutes.
Step 7 : Finally, the dish is ready to serve and, if desired, can be garnished with fresh parsley for a final touch of color and aroma.
