Chicken Aji Recipe
Ingredients
1 Whole chicken or chicken breast
2 Whole garlic cloves
1 Celery stalks, chopped
1 Carrot, chopped
1 Onion, chopped
1 Diced onion
5 tablespoons of Ground yellow aji
2 tablespoons of Ground mirasol aji
1 tablespoon of Ground garlic
4 Bread slices without crust
Evaporated milk
3 tablespoons of Vegetable oil
1 pinch of Salt
1 pinch of Pepper
Cumin
Clove
50 grams of Chopped pecans
50 grams of Grated parmesan cheese
Preparation
Step 1 : To prepare this dish, start cooking the chicken breast in a pot with water, garlic, celery, carrot, onion, and salt.
Step 2 : Then set aside the broth and shred the chicken.
Step 3 : In another container, soak the bread in milk, broth, or water and break it apart.
Step 4 : In a pot, heat the oil and sauté the onion and garlic.
Step 5 : Once the onion is translucent, season with salt, pepper, clove, and ground aji.
Step 6 : Cook until the onion absorbs the color and flavor of the aji.
Step 7 : Add the drained bread to the mixture, add a splash of milk, and blend with pecans.
Step 8 : If necessary, add more milk to facilitate blending.
Step 9 : Return the mixture to the pot and add the shredded chicken, grated Parmesan cheese, and some broth.
