½ kilogram of Beef lung or small offal from kid or lamb

4 Peeled and chopped potatoes into squares

1 Chopped onion

2 Mint sprigs

2 tablespoons of Ground aji panca

1 tablespoon of Ground yellow aji

2 tablespoons of Ground garlic

½ cup of Oil

3 cups of Beef broth

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare this dish, start by boiling the beef lung in a pot with water until it is tender.

Step 2 : Then, drain and cut into small squares.

Step 3 : In another pot, heat the oil and fry the onion, garlic, ground yellow aji, ground aji panca, salt, pepper, and cumin.

Step 4 : Next, add the chopped beef lung and mint, sautéing for a few more minutes to blend the flavors.

Step 5 : Afterward, add the broth along with the potatoes, cover the pot, and let it boil until the potatoes are cooked.

Step 6 : It is important that the stew remains juicy.

Step 7 : Finally, this delicious dish is served accompanied by white rice and cooked maize (mote).
