Cau Cau a la Criolla
Ingredients
½ kilogram of Tripe
2 tablespoons of Milk
1 Mint sprig
½ cup of Oil
2 cups of Chopped onion
½ teaspoon of Ground garlic
¼ teaspoon of Cumin
Ground yellow aji
1 teaspoon of Clove
4 White potatoes in cubes
20 milliliters_plural of Lemon juice
2 tablespoons of Chopped mint
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Place the tripe in a pot and cover with water, adding the milk and mint sprig.
Step 2 : Cook until tender, then cut into cubes and set aside.
Step 3 : In a separate pot, heat the oil and fry the onion.
Step 4 : Then add the garlic, cumin, ground yellow Aji, and clove; season to taste.
Step 5 : Add the tripe and potatoes, bringing the mixture to a boil.
Step 6 : Sprinkle some mint leaves and lemon juice, then mix well.
Step 7 : To serve, it is recommended to accompany with white rice and enjoy this delicious dish.
