Ingredients

1 Pork leg

Ají mirasol in paste

Ají panca in paste

Crushed garlic

½ cup of Chicha de jora

1 pinch of Salt

1 pinch of Pepper

1 pinch of Cumin

Preparation

Step 1 : To prepare the pork leg, start by seasoning it with salt, pepper, cumin, and crushed garlic.

Step 2 : Then, rub the leg with ají mirasol and ají panca.

Step 3 : Make cuts in the leg to allow the flavors to penetrate, and re-season the meat.

Step 4 : Tie the leg and add the chicha de jora.

Step 5 : Let the leg marinate so it absorbs all the flavors.

Step 6 : Before baking, preheat the oven to 150°C.

Step 7 : Place the leg on a baking tray and cover with aluminum foil.

Step 8 : Bake at this temperature for 2 hours.

Step 9 : Then, remove the foil and increase the temperature to 180°C to finish cooking and achieve a perfect golden crust.
