Ingredients

36 Clams

½ Chopped onion

2 Leek pieces

cup of White wine

3 tablespoons of Lemon juice

2 Garlic cloves

2 tablespoons of Oil

2 Chopped onions

3 tablespoons of Chopped leek

2 tablespoons of Ground garlic

2 tablespoons of Ají puree

2 tablespoons of Butter

1 tablespoon of Mustard

1 teaspoon of Ground pepper

2 cups of Clam broth

2 tablespoons of Breadcrumbs

2 tablespoons of Grated Parmesan cheese

Parsley

Thyme

1 pinch of Salt

Preparation

Step 1 : To prepare the baked clams, start by cleaning the clams and placing them in a pot with water.

Step 2 : Add a piece of onion, lemon juice, 2 garlic cloves, 2-3 leek pieces, and a splash of dry white wine.

Step 3 : Cook for 8 minutes, then remove and discard any clams that did not open.

Step 4 : Reduce the cooking broth to 2 cups and adjust seasoning to taste.

Step 5 : Remove the top shell of each clam and place them on a baking tray.

Step 6 : In a skillet, heat oil and add onion, leek, and garlic.

Step 7 : Incorporate ají mirasol puree with butter, and add mustard, ground pepper, and season as desired.

Step 8 : Pour in the clam broth and thicken the sauce.

Step 9 : Pour the thickened sauce over the clams on the tray and sprinkle with breadcrumbs and Parmesan cheese.

Step 10 : Bake in a preheated oven at 180°C for 8 minutes.

Step 11 : When serving, sprinkle with parsley and thyme for a fresh touch to the dish.
