Arroz a la Chiclayana
Ingredients

¼ kilogram of Duck meat
¼ kilogram of Peas
3 Onions
3 Garlic cloves
2 Chilies
Cilantro
Water
Rice
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The pieces are seasoned with salt, pepper, cumin, garlic, and a splash of dark beer, then browned until well sealed.
Step 2 : Meanwhile, prepare a dressing with onion and garlic.
Step 3 : Next, make a mixture with yellow chili paste, special chili, Marisol chili, salt, pepper, cumin, and cilantro, cook it, and then add the sealed duck pieces.
Step 4 : Let it boil for an hour, then remove the pieces.
Step 5 : Add the rice, followed by Chicha de Jora and dark beer.
Step 6 : If necessary, add water to cover the rice, along with peas and diced carrots.
Step 7 : Cook until the rice is dry, approximately 15 minutes.
Step 8 : Once fluffy, the delicious Arroz a la Chiclayana will be ready to serve.
