Arequipa-style Spicy Pork

Ingredients

1 kilogram of Pork meat

4 Minced garlic

1 Onion in strips

1 teaspoon of Cumin

2 Chopped mint leaves

2 tablespoons of Chopped cilantro

½ kilogram of Peeled white corn

4 Chinese onions

3 tablespoons of Vegetable oil

Colorful ají panca

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The corn is soaked overnight in hot water and cooked until nearly done.

Step 2 : Then, heat the oil in a pot and add the onion, frying until tender.

Step 3 : Next, add minced garlic to taste, salt, pepper, and cumin, then incorporate the pork to brown it well.

Step 4 : After that, add the minced garlic, followed by the cooked corn and enough cooking water.

Step 5 : Cover the preparation and cook on low heat until everything is cooked through.

Step 6 : Once ready, add the chopped mint, Chinese onions, and cilantro.

Step 7 : Mix everything well, let it rest, and serve accompanied by white rice.
